Herbicide in a Grand Cru parcel! クリオ・バタール・モンラッシェ(グランクリュ)に除草剤



これら2枚の写真は、友人のフェイスブックから拝借しています。彼がほんの数日前に撮影したそうです。ここの区画は、大変高価なワインを輩出するクリオ・バタール・モンラッシェ グランクリュの畑です。この写真からも、除草剤が大規模に散布されていることが一目瞭然です。

グーグルやその他の情報を探せば、この区画の所有者が誰かを探しだすのは難しくありません。クリオはかなり小さい畑で、所有者はほんの少ししかいません(3!)。問題のドメーヌ・所有者の公式ウェブサイトには、明示的に「いかなる化学的除草剤も使用していない」と宣言しています・・・。ブドウ畑には、観光客を喜ばせる伝説と実際の現実の間には、大きな歪曲があることに注意してください!

I borrow these two snapshots from a friend's FB page. Thanks to him! He took them a couple of days ago. The parcel there is Criots-Batard-Montrachet, Grand Cru producing expensive bottles. At the sight of these picture it is quite obvious that herbicide has just been massively spread.

With the help of Google or whatever search-engine, it is not difficult to find the owner of this parcel: Criots is quite small and there are only a couple of owners there (3!). Checking the official website of the domain owner in question, I noticed that they claim very explicitly "not using any chemical herbicide"...  Beware there are massive distortions between folklore stories to please tourists and real practices in the vineyards!

福岡ワインセミナー3 試飲ノート Cours du Vin 3 - Fukuoka - tasting notes

Gevrey Evocelles/Volnay/Pommard PC Argillières


3/19(土)、ブルゴーニュ赤ワインの醸造についてセミナーを行いました。ブルゴーニュには、基本的におおまかに2種類の赤ワインの作り方があります。一つ目は、除茎、低温マセレーション、そして伝統的発酵を行う作業です。低温マセレーションはアンリ・ジャイエによって導入され、現在はブルゴーニュの生産者の約80%が行っています。もう一つは、全房マセレーション、またはセミ=カルボニック・マセレーションという、まずボジョレー地方で導入された方法で、現在ブルゴーニュでも、ドメーヌ・ロマネ・コンティやデュジャックなども行っています。

今回のセミナーでは、これら2種類の作り方のワインを比較しました。ワインは、
ポマール・アルジリエールは全房マセレーションを行っていますが、他の二つは伝統的スタイルです。ジュヴレ・エヴォセルは18ヶ月の樽熟成を行い、ヴォルネイ村名は12~13ヶ月の樽熟成という違いがあります。今回の試飲で、2種類の作り方の違いが大変よく分かったと思います。

このポマールは、抜栓直後から大変開いていて、大変典型的な香りがあります。ポマール村の北側の斜面で作られた上質でエレガントなタンニンがありますが、胡椒のようなアロマを作る房の茎のタンニンもあります。全体的に複雑な良いワインです。

このジュヴレのワインは、素晴らしい豊富なタンニンがあるけれど、何も不快なところはありません。抽出がまさにパーフェクト。深く良い味わいです。このワインは前日に抜栓し、再度コルク栓をしてセラーに置き、提供1時間前に再度デキャンタージュしました。ワインはよい状態でした。

このヴォルネイも大変伝統的作り方で、私の愛するヴォルネイ典型のアロマがあり、勿論比較的軽めです。ヴォルネイ典型のアロマを知るには、この本格ヴォルネイワインを1度飲んでみるべきでしょう!

On Saturday the 19th of March, I gave a trash course on Pinot Noir burgundian vinification.There are basically two great ways of making red wine in Burgundy. The first one consists in the following operations: grape desteming, cold soaking and fermentation which is "classical". Cold soaking method was first introduced by Henri Jayer. Now 80% of burgundian winemakers do so. The other way is the so called "full berry maceration" or "semi-carbonic" maceration that is applied in Beaujolais and also by Domaines Romanee Conti, Dujac... in Burgundy.

We had the opportunity to taste three wines to compare these two methods. Wines were:

The first wine (Pommard Argillières) is made according to the full berry maceration whereas the other two are classical style. The Gevrey Évocelles wine aged for about 18 months in barrel and the Volnay village stayed only 12-13 months in barrel. The tasting made pretty clear the differences between the two vinification methods above.

The Pommard wine was very open straight after opening with very typical fragance. Fine and elegant tannins from the Pommard north slope were present but there were also tanning from the stem yielding pepper-like aromas. The whole thing was quiet complex.
The Gevrey wine had incredible tannins but nothing harsh. Extraction was just perfect! It was very deep and nice. I opened the bottle the day before, kept it in the cellar with the cork on and eventually used a decanter one hour before serving. So that was fine.
The Volnay wine was also very classical, lighter of course with the Volnay aromas that I love. One has once to taste a genuine Volnay to know them!

Meursault Henri Germain & Fils 11 ムルソー アンリ・ジェルマン・エ・フィス 2011


このムルソー村名はドメーヌの異なる区画から作られています。スタイルはズバリ古典的でエレガント、気に入られるように手を加えたような人工的なところはありません。澱上の長い樽熟成で、バトナージュは行いません。抜栓時に、わずかにトーストの還元香があります。その他はムルソーのアロマで、白い花に比較的ミネラル感のある余韻があります。長く複雑で、重たるいところは全くありません。酸味と脂肪質の絶妙なバランスです。全てがこの上なく上質で、いつまでもいつまでも楽しめるワインです。本当に大好きです。

追記: 抜栓三日後に最後の数滴を飲んだのですが、本当に凄かったです。

Ce Meursault Village est issu de différentes parcelles du domaine. Le style est juste: classique et élégant sans artifices tapageurs. C'est de l'élevage long sur lies sans batônnage. Il y a une très légère touche grillée de réduction à l'ouverture. Pour le reste les arômes sont murisaltiens plutôt sur les fleurs blanches avec une finale relativement minérale. C'est long et complexe sans aucune lourdeur, avec un bel équilibre gras/acidité. Le tout s'avère classieux et procure énormement de plaisir. J'adore.

PS: dernière goutte bue trois jours après ouverture: c'est superbe!

Château Belle Brise à Pomerol 2003 シャトー・ベル・ブリーズ ポムロル 2003

まず最初に一言:赤ワインはまず何よりタンニンを楽しむものです!そしてそのタンニンは上質で適度に豊富でなければいけません。その意味ではこのワインは大変素晴らしいです。2003年という生産年は大変暑かったので、ワインの味わいはタンニンがとても熟した、ちょっと現代的ボルドーの味わいになっています。けれど、ベル・ブリーズでは、生産者が大変丹念に作っているので、ワインの抽出は適切で、不味かったり重たすぎたり雑味があるようなところは全くありません。13年経った現在、このワインに果実味を求めることはしないでください。そういうワインではありません。カルボニック・タイプの大変弱い抽出で作る所謂「自然」なワインを飲んでいるわけではありません。このワインは素晴らしい熟成アロマのワインです。香りは大変深く、わずかにある酸味、タンニンは大変柔らかく、口中の余韻はとても長い、石墨や黄タバコなどの複雑さがあります。ああ美味しい!ボルドーのワインがどれもこのように作られていたなら、私はボルドーが大好きです。

A reminder first of all: red wine is about tannins. They should be fine and in good quantity. With that respect I found this wine excellent. Vintage 03 was very hot so that this wine tastes a bit like modern Bordeaux wines. Nevertheless viticulture is top notch at Belle Brise and extractions are as always reasonnable, so that there is nothing rough or bad in this wine. This wine is now 13 years old (respect!) so please do not look for fruity aromas in it. This is not the purpose. We are not drinking so-called "nature" wines aka wines from very weak macerations of carbonic type. This wine shows great evolution aromas: very deep nose, and silky tannins very long in mouth with complex graphite and blond tobacco notes. Yum! Yes I like Bordeaux wines when they are done this way. 

D'abord un petit rappel: le vin rouge c'est avant tout une histoire de tannins! Ils doivent être qualitatifs et en quantité. De ce point de vue je trouve ce vin magnifique. L'année 2003 a été  très chaude, donc le vin ressemble aux Bordeaux modernes avec des tannins très murs. Mais la viticulture est très soignée à Belle Brise et les extractions ont été raisonnables, donc il n'y rien de grossier ni mauvais. Ce vin a maintenant 13 ans donc n'y cherchez plus de fruit! Ce n'est pas ça. (On n'est pas sur des vins "natures" aka des macérations inexistantes type carboniques...) Il sur de magnifiques arômes d'évolution: un nez très profond avec une légère acidité, des tannins soyeux très longs en bouche sur des notes complexes de graphite et de tabac blond. Mium. Grande leçon. Oui, j'aime Bordeaux quand c'est fait comme ça.
