次のヴァンファン本浜主催ワインセミナー(北九州)は8/5(金)です。金曜日はお魚の日なので(⁉)、コルトン・シャルルマーニュとムルソー・・・どのワインがどの寿司にあうかを一緒に考えてみませんか?テーマにご興味ある方は北九州市戸畑の照寿司のカウンターに8/5(金)19時集合!但しカウンターは9席だけなのでお早目にご予約ください。

照寿司はミシュランガイドで1フォシェットの評価で紹介されています。大将の渡邉さんは照寿司三代目。渡邉さんは食材の仕入れにとことんこだわっています。当日は大将が、その日の最上の食材を用いてカウンターにてご提供くださいますから、内容は当日のお楽しみです。
今回の会費の内訳は、ワインは8,000円、お食事は15,000円です。

Corton, Meursault et Suchis - TERUSUCHI - Tobata - Ven. 5. Aug



Prochain séminaire Vins Fins Motohama: le vendredi 5 Aout.

Comme vendredi est le jour du poisson, je vous propose de réfléchir ensemble à l'adéquation entre les vins blancs bourguignons: Corton, Meursault... et les divers types de suchis d'été au Japon.

Pour celles et ceux intéressés par le sujet, rendez-vous donc au comptoir du restaurant TERUZUCHI de Tobata le vendredi 5 Aout à 17 heures.




Attention il n'y a que 9 places au comptoir!

TERUZUCHI est référencé une fourchette au Michelin. Il est tenu par le chef Watanabe qui est la 3ième génération de cuisiniers spécialisés dans les sushis. Watanabe-san est extrèmement pointilleux sur le choix des ingrédients. Il se propose de cuisiner pour nous au comptoir à partir des produits de saison. Nous lui donnons carte blanche.

Le prix des vins des vins est de ¥8000, celui du repas servi au comptoir  ¥15000.

Pour les vins nous souhaitons présenter:

- Meursault 11 Domaine Henri Germain
Nous ouvrirons d'autres bouteilles en fonction du nombre de participants.

Our cellar: 12 degrees C everytime! うちのセラーはいつも12度です!


弊社セラーは常に摂氏12度で、湿度は60~80%です。これはワインの保存には不可欠です。が、全ての輸入者がそうしているわけではないことに注意してください。(実際、保存温度が17~18度だと公言しているところもあります。)保存状態が劣ればワインをダメにするかもしれません。だから、大変高額なグランクリュの中には、残念な内容に終わってしまうワインもあるわけです。

Our cellar: 12 degrees C everytime and between 60 and 80% of humidity. This is mandatory for keeping bottles. Beware not all importers do so. (Some claim for instance storage temperatures between 17 and 18 degrees C. ) Poor storage conditions might spoil bottles. This explains why some Grand Crus bottles paid an awfully expensive price eventually reveal disappointing.

赤ワインはタンニンです!!! Red wine is all about tannins!!!

緑茶でも、コーヒーでも、ブラックチョコレートでも同じです。(但しあの甘たるい安物脱脂粉乳を大量に混ぜたものではありません。)私がこのことを何度も繰り返すのは、土曜日に来店した懇意のお客さんが、赤ワインは好きだけれどタンニンは好きではないと言ったからです!!! 私にはそれは全く意味がありません。ブルゴーニュの上級畑でさえ、軽い赤ワインを作るのが昨今の流行です。こういう生産者は、最上のタンニンだけを取り出すために軽い抽出を好んで用いると説明します。けれどこれは宣伝文句にすぎず、実際はブドウの品質が劣るため十分な抽出が行えないのです。(そういったブドウはネゴシアンからのものが多いです。)
赤ワインのクオリティーはタンニン由来です。タンニンは上質で豊富なものがグラン・ヴァンです。実際それはかなり難しいのです。良いタンニンもあれば、荒々しいものや不快なものもあります。けれど言えることは、タンニンのない赤ワインは赤ワインではありません。それはロゼか、他の何かです。で、もしタンニンそのものを好まないのであれば、白ワインや日本酒なんかを楽しめばよいのです。タンニンを追求しないのであれば、赤に大枚を払うのはやめるべきです。

Red wine is all about tannins!!!
Like green tea, black chocolate (not that awful sweet milky stuff...), etc... I repeat it because I had a chat with a dear client on saturday. He claimed he loved great red wines but not tannins!!! That made no sense at all to me.
Also there is a trend to produce light red wines even from great Burgundy parcels. These producers usually explain that they prefer light extractions in order to retain only the best tannins. Actually this is a mere commercial argument since actually the truth is that the quality of their grapes (often from negoce) do not allow much extraction.
So: the quality of red is mainly that of its tannins. They should be both qualiltative and quantitative. Which is quite difficult! Some tannins are fine, some are rough and unpleasant. But all in all, a red wine without tannins is not a red wine. It is rose' or something else... And if one does not appreciate tannins, one should rather go for white wines or sake' for instance. Do not spend a fortune on red if you are not looking for tannins.
