Soirée - Cuisine de Bourgogne - Étincelle Kawamoto











Grand merci à tous ceux présents pour cette soirée chez Mari & Ken. J'espère que vous avez passé du bon temps et pris du plaisir avec la cuisine et les vins.

Ken a magnifiquement revisité la cuisine de Bourgogne. Sa terrine d'anguilles en entrée était une réussite et s'est très bien accomodée avec le Morey 1er. Bravo pour l'audace et la créativité. Les cuisses de grenouille avec cette sauce persillée (Mumm!!!) et le flan aux fines herbes étaient également superbes à mon goût et très bien accompagnées par le Meursault. Plus classique, bien sûr, était le coq au vin avec le Gevrey, j'ai beaucoup apprécié la sauce.

Merci à Mari et Ken pour leur travail et leur accueil. Souhaitons encore d'autres soirées à la gloire de Bacchus chez Étincelle.

"Natural" wines 「自然な」ワイン



Actually "Natural" wines means nothing since all wines are made "naturally" from grapes fermented from yeasts. Though the term "natural" is not correct, still when we talk about it with winemakers we understand each others, and every one knows what it is about!

Skipping technical details: it is about wines elaborated with the less human intervention as possible. Vineyard should grow without chemicals in the fields (weed killers, fertilizers, ...) but also vinifications should process with minimal handling and without chemical nor organic additives apart from a necessary small amount of sulfites. (I think no sulfites is no good!)

Is this way of doing wine any better?
Regarding only the taste: yes, definetely! Actually it is the only way of preserving the soil and getting the maximal aromatic complexity out of it. To this extent many kinds of indigenous yeasts will yield a much richer and complex taste than a unique kind of selected yeast. Also any attempt to correct the taste of wines will kill more of it than it is beneficial for it.

Who is doing wines this way?
Unfortunately not all winemakers. It requires much more work, care and cost, therefore it does not suit industrial winemaking. The good guys in Burgundy & Côtes du Rhônes do so. Since the 80's, the use of selected yeast, artificial ageing or osmotic techniques and so on... have been very common in Bordeaux. One talks about "technological" wines, guess which they are! There are a few rare rebels making wines the old way in Bordeaux. At VFM we think they deserve much attention since we also love Bordeaux.

「自然な」ワインという言い方は、あまり意味をなさないかもしれません。だってワインは、ブドウを酵母を用いて発酵させて作るだけのいたって「自然な」ものですから。しかし、「自然な」という言葉は不正確にもかかわらず、私たちがワイン生産者と話す時、この言葉を用いても互いの意図とすることがよく分かります。(訳注:日本での「自然派」といった言葉もこの範疇に入ると思います。)

技術的な詳細を省くと、それは人の手を可能な限り介在させずに丹念に作り上げたワインのことだと思います。畑で除草剤や殺菌剤などの化学的なものを用いずにブドウを育てるだけでなく、醸造のときに、必要最小限の亜硫酸塩(二酸化硫黄)を用いる以外は、いかなる化学的・有機的添加物も加えず、人の手をできるだけ加えずに作られたものです。(但し、亜硫酸塩を全く加えないのはよくありません。)

この方法がワイン作りにおける最良の方法か?
味わいの点において言えば、全くそのとおりです!実際、土壌を守り、そこから味わいや香りの複雑さを最大限に得る唯一の方法です。多くの自生酵母が豊かに生じ、限られた数の選別された(訳注:つまり後から加えられた)酵母よりも、複雑な味わいが得られるのです。更に、ワインの味わいを修正するような試みは、その結果よりもむしろ多くを失うことのほうが大きいのです。

誰がこのようにワインを作っているか?
残念ながら全てのワイン生産者がこのように作っているわけではありません。なぜなら、それは多くの仕事、注意とコストが必要だからです。よって工場生産的ワイン生産には向きません。ブルゴーニュやコート・ド・ローヌの限られた生産者だけです。80年代以降、選んだ酵母を使い、人工的にワインに年をとらせ、浸透を用いた技術、等・・・が、ボルドーでは大変一般的になったのです。「テクノロジー」ワインということを聞いたこともあるかと思いますが、どういったワインか想像に難くないですね。ボルドーにも僅かですが昔ながらの方法でワインを作っている生産者がいます。ヴァンファン本浜ではそういった彼らももっと注目に値すると思います。なぜなら私たちはボルドーも大好きですから。

Bruno et Isabelle - Les fous du velo.






自転車で世界旅行中のブルーノとイザベルが立ち寄ってくれました。出発してもう既に6年、ヨーロッパを南北東西周り、シベリアからモンゴル、中国、韓国を通って、日本へ来てもう6ヶ月。これから九州を少し回ったあと台湾へ渡る予定だそうです。あと5~7年かけて世界一周するそうです。本当にびっくりのご夫婦ですが、本当に気さくで温和な方たちで、こちらが逆に元気をもらった感じです。ほんとに、ちょっと通りがかっただけ、といったふうに爽やかに旅立たれていきました。

Etincelle, le 15 Juin: gastronomie de Bourgogne エタンセール 6月15日 ブルゴーニュの伝統料理

Mari & Ken Kawamoto discutant le menu & les vins pour la soiree du 15 Juin.

La regle pour cette soiree est de ne cuisiner qu'avec des ingredients typiquement Bourguigons.
Les options retenues sont les suivantes:
- Cuisses de grenouille
- Anguille -- creation de Ken!
- Coq au Chambertin.
Exit donc les escargots! Qui les regretera? Pas de poisson de mer, non plus: il n'y a pas eu de mer en Bourgogne depuis 150 millions d'annees.

Les cuisses de grenouille seront servies avec un Meursault 2008, le coq au Chambertin avec un Gevrey 2004 et l'anguille avec... un Morey 1er cru 2006!

先日、川本憲&万里夫妻が来店、6月15日のワイン会についてミーティングをしました。今回のワイン会のルールは、ブルゴーニュの伝統的な食材を用いた料理を出すこととしました。そこで決まったのメニューは

- グルヌイユの腿肉(グルヌイユとは要するにカエルのことですが、「カエル」と書くとちょっとショッキングなのでこう訳しています。)
‐ ウナギ(川本シェフのオリジナルで!)
- コック・オ・シャンベルタン(鶏肉の赤ワイン煮。一般的にはコック・オ・ヴァンともいいますが、ここはブルゴーニュ料理なので「~シャンベルタン」となります)

ということでエスカルゴは退場! 残念な方いらっしゃいます?それから、海魚はありません。だって、ブルゴーニュには1億5千万年前から海はないのですから。

グルヌイユの腿肉はムルソー2008、 コック・オ・シャンベルタンはジュヴレ2004、ウナギはモレ プルミエ2006と一緒に楽しんでいただく予定です。
