Chez Georges à Lyon. Une r&éférence pour la cuisine lyonnaise. Très bien fait, c'est fin, les ingrédients sont de qualité, les cuissons parfaites. Nous avons gouté presque tous les plats du menu. Quelques photos ci-dessous.
リヨンのシェ・ジョルジュ。リヨンの郷土料理レストランの筆頭です。良い食材、と丁度良い調理具合、繊細で大変良いお仕事です。メニューのほぼすべての料理を試しました。写真のいくつかは以下に。

Germain's wines tasting notes ジェルマン・ワインの試飲ノート

Some of you tasted them during our seminar. I also got the opportunity to taste again all those wines on 3 days. Below are my short notes, just to let you know where these wines are right now.

読者の中にはセミナーで試飲した方もいらっしゃるのではと思います。私もまた全てのワインを3日にかけて再度試飲する機会を得ました。以下が現在ワインがどういう状態かをつづった私のショートノートです。

Domaine Henri Germain et Fils Bourgogne Blanc ブルゴーニュ白 11. It needs to breathe, so open it in advance. Very well made, very classical white burgundy. A "little" meursault.
呼吸させてあげる必要があるため、前もって抜栓。大変良くつくられている大変古典的ブルゴーニュの白。プチ・ムルソー。

Domaine Henri Germain et  Fils. Chassagne Montrachet Rouge シャサーニュ・モンラッシェ赤 10. Very elegant wine with mature and slightly teasing tannins - Chassagne!
よい熟成を迎え僅かな野生的タンニンがあるも大変エレガント。シャッサーニュです!

Domaine Henri Germain et Fils Meursault ムルソー 09. This was superb. Pure and complex, very much Meursault. I loved it. 
素晴らしいワインです!ピュアで複雑、大変ムルソーらしい。大好きなワインです。(Meursault’11はこちら)

Domaine Henri Germain et Fils, Meursaut Charmes ムルソー・シャルム 07. With typical white flower's aromas, praline, complex and Charmes-like. I would give it a few more years since it got even better a day after opening.
典型的な白い花のアロマ、プラリネ、複雑でシャルムらしい。抜栓翌日は更に良かったので、もう数年待たせたい。

Domaine Henri Germain et Fils, Chassagne Montrachet Morgeot シャサーニュ・モンラッシェ モルジョ 06. More opulent than Charmes with slightly less acidity. Exotic aromas, superb now.
シャルムよりも広がりがあり酸味も少ない。エキゾチックなアロマ。現在大変素晴らしい。

In brief the two Chassagne wines and the Meursault village were superb and are at their peaks. Bourgogne Blanc and Charmes 07 can be kept a little more time.

要約すると、二つのシャサーニュのワインとムルソー村名は大変素晴らしくピークにあります。ブルゴーニュ白とシャルム’07はもう少し寝かせてもよいと思います。

Jean-François Germain - Le top de Meursault. ジャン=フランソワ・ジェルマン - ムルソーのトップ

7月12日、旧松本邸にて、ムルソーのドメーヌ・アンリ・ジェルマンの素晴らしいワインをセレクトしてご紹介します。これらのワインは、瓶中で完璧な熟成を遂げています。以下がリストです。


ジャン=フランソワ・ジェルマンとは?彼のスタイルは?どのように仕事をしているか?以下に幾つかその答えをあげていますがが、これらのワインの本当の素晴らしさを実感していただくには、是非7/12に試飲しに来ていただきたいです!

Le dimanche 12 Juillet nous aurons l'occasion de présenter  à la Maison de Matsumoto-San une sélection de grands vins du Domaine Henri Germain à Meursault. Ces vins ont parfaitement vieilli sous verre et sont maintenant à maturité. Voici la liste:

Qui est Jean-François-Germain? Quel est son style? Comment travaille-t-il? Quelques éléments de réponse ci-dessous. Mais pour vous faire une idée définitive de la qualité exceptionnelle de ses vins, je vous invite vraiment à venir les goûter! 

Meursaut Perrières - À attendre 10 ans!
ムルソー・ペリエール、10年ほどお待ちください!
ジャン=フランソワ・ジェルマンは、彼の父アンリがムルソー村に1973年に創業したドメーヌ・アンリ・ジェルマン・エ・フィスを率いています。彼のドメーヌは、白ワインでよく知られ、特に生産者たちの間で評判です。(仕事を評価するという点では同業者が一番よく判断できるでしょう。)ジャン=フランソワは、カリスマ的で、フレンドリーだけれど思慮深さがあります。彼のワインは全て長年の愛好家に売れてしまうので、饒舌なコミュニケーションは必要ないのです。私には、ムルソーで最も素晴らしい生産者の一人です。(「最高の」なんていう表現は、あまり意味がないでしょ??)

ドメーヌ・アンリ・ジェルマンは少しずつ大きくなって、現在9ヘクタール足らずを所有しています。そのうち、白ワイン最高の区画であるムルソー・ペリエール、シャルム、ポリュゾ、リモザン、シュヴァリエール、またシャッサーニュ・モンラッシェのプルミエ・クリュ モルジョ=フェランドがあります。赤ワインは、比較的下位区画で作られています。

ジャン=フランソワがブドウ畑の仕事と醸造を行います。彼のスタイルは?要約すると、大変ムルソーの伝統的で、ジョバールやルーロなどと少し似通っています。ジャン=フランソワのワインの特徴はというと、純粋さとエレガンスです。このレベルの品質を表現するには、ブドウ畑と醸造の両方で厳密で緻密な仕事を求められます。

白ワインは醸造が大変長いのが特徴です。冷涼なセラーの中で、発酵と上質な澱上の熟成を樽中で二冬にわたって行います。この作り方は代々引き継いだもので、ジャン=フランソワは大きく変える必要はないと考えていて、実際本当にそのとおりなのです。ジャン=フランソワはまた、分かり易い樽香や、バトナージュなどの人工的な醸造テクニックを全て排除しています。

彼の白ワインは何年か待つ必要があります。若いときには控えめですが、時間をかけて瓶中で素晴らしく熟成します。ジェルマンの10年ほど熟成したムルソーを試飲すれば良くわかりますし、実際素晴らしい経験です・・・また、ムルソーの長期熟成ワインとはどうあるべきかを大変納得させられます。一方赤ワインも、実際とても良く作られます。人工的なものは何も無い明快さに、テロワールとエレガントさに忠実です。ムルソー村名(赤)クロ・デ・ムーシュなどは、まろやかなタンニンが素晴らしい比較的女性的なワインです。

後は皆さん実際に飲んでみられるだけです!

Jean-François Germain dirige le domaine Henri Germain et Fils à Meursault que son père, Henri, a fondé en 1973. Le domaine est très réputé pour ses blancs, et ce surtout parmi les vignerons (qui sont peut-être les plus compétents pour juger du travail de leurs pairs). Jean-François est une personnalité charismatique et affable et il adore la discrétion. Il vend tout à une clientèle de connaisseurs et donc n'a pas besoin de communication  tapageuse. Selon moi c'est un des meilleurs vignerons de Meursault. (Dire qu'il est LE meilleur n'a aucun sens, n'est-ce pas?).

Le domaine Henri Germain s'est peu à peu agrandi et exploite maintenant un peu moins de 9ha parmi les meilleurs parcelles en blanc: Meursault Perrières, Charmes, Poruzot, Limozin, Chevalières ainsi que la parcelle PC Morgeot-Fairendes en Chassagne-Montrachet. Les vins rouges du domaine sont produits sur des parcelles un peu moins réputées.

C'est Jean-François qui travaille dans les vignes et vinifie. Quel est son style?  Pour résumer: très classique murisaltien, un peu comme le travail de Jobard, Roulot, etc... Ce qui caractérise les vins de Jean-François est leur pureté et leur élégance. Ce niveau qualitatif reflète en fait un travail rigoureux et précis dans les vignes et aux chais.

Pour les blancs, les vinifications sont très longues: fermentations et élevages sur lies fines en fûts deux hivers en cave froide. Le procédé est ancestral. Jean-François n'a jamais ressenti la nécessité de le changer radicalement et il a parfaitement raison. JF évite aussi tout artifice de vinification comme le boisé outrancier ou le bâtonnage.

Ses vins blancs sont à attendre quelques années, ils sont discrets dans leur jeunesse mais évoluent magnifiquement sous verre. Goûter des Meursault de Germain d'une dizaine d'années voire plus est une magnifique expérience... C'est aussi très convaincant pour comprendre ce que doit être un Meursault de grande garde. Quant aux vins rouges, ils sont très bien faits: précis, sans artifices, fidèles à leurs terroirs et élégants. Le Meursault village (rouge) clos des Mouches, notamment, est plutôt féminin avec de magnifiques tannins soyeux.

Il ne vous reste plus qu'à goûter...

Trends in Burgundy - red ブルゴーニュの流行 - 赤の場合

ブルゴーニュのワインをここ何年か試飲してきて思うのは、生産者の間では現在、素晴らしいテロワールのワインを「長期熟成できる」よりは「若いうちから楽しめる」ようデザインする絶対的傾向があります。これはメディアや批評家が、いわゆる宣伝という仕事として、消費者にあてたメッセージの一面であることは確かです。

According to some tasting within the last years of different red wines from Burgundy I think that there is now a definite trend amongst producers to design wines from grand terroirs that can "be appreciated young" while "they should age well". Well this is at least the message to the public and that is relayed by media and critics who do their usual adverting jobs.

しかしこのことを私は少し心配しています。

純粋に技術面の話をすれば、もし若いうちから良い味わいのワインをデザインしたければ、開けたてから発酵のアロマのするワインを作るために、おそらくカルボニック・マセレーション、軽い抽出、短い発酵、還元作用は無し、の選択をするのかもしれません。(ちなみに発酵のアロマは何年も残りません。)

そして現在、多くのプルミエ・クリュやグラン・クリュでさえ、この方法で作られています。生産者、メディア、販売者の誰もが、これが現在の流行、「現代的」スタイルで、フィネスと純粋さの追求、などなど・・・そしてこれが、偉大なブルゴーニュの赤ワインの作り方だと説明します。しかし、これらは全て間違いです! 実際これは、素晴らしい区画から大変残念なワインを作る方法だけれど、むしろ都合がよいのです。なぜなら、良質のタンニンを持たない出来の良くないブドウを容易に扱えるからです。

I am a bit worried by this matter of fact.

To talk from a purely technical point of view: if one wants to design a wine that tastes well when young, one should look for possibly carbonic macerations, light extractions, short fermentations, no reduction, in order to produce a wine that opened up early with fermentary aromas (those do not last more than a couple of years).

There are many premier crus and grands crus which are now produced along this line. Producers, medias or whatever seller explain that this is the new trend, the "modern" style, the quest of finesse and purity etc... and that this is the way of making great red burgundy wines. Well this is all wrong! Actually this is a very poor way of making wines from great parcels, but this is rather convenient because, it deals easely with poor quality grapes with no great tannins.

しかし、赤ワインとはタンニンを楽しむもので、素晴らしいワインは上質のタンニンを多くもっているものです。ピノ・ノワールのブドウからブルゴーニュでそういったワインを作るには、昔からのシンプルな作り方を行います。良い区画で作られる上質のブドウ、低温マセレーションを通して適度な抽出、上質の澱上で若干の還元作用を行いながら1年以上の樽熟成。これが伝統的な作り方で、実際この方法だと良いワインが作れるのです。ただこの方法の唯一の欠点は、抽出には良いブドウが必要なのと、飲む前に数年の瓶熟成を待たなければいけないことです。

しかし、こういった伝統的な作り方の素晴らしいワイン、例えば、ユベール・ド・モンティーユの2003年以前のワインなど、を是非飲んでみられてください。これがそうです!一目瞭然です。

最近、とある小さな生産者の素晴らしいシャンボール・ミュジニーを試飲する機会がありました。まず、そのコストパフォーマンスは、他の誰も太刀打ちできません。その上、私がこのごろ試飲した多くの生産者のワイン(どのワインか言いませんが皆さんどこでも見かけるワインばかりです)と異なり、そしてずっと良かったです。実際私が比較したその他のワインの貧相さにショックを受けました。大変軽くて、タンニンはあまりなく、余韻は無い、アミルのアロマ・・・それがプルミエ・クリュやグラン・クリュの区画でもです。申し訳ないけれど、その価格を出すなら、私は瓶の中にもっと何かが欲しいですね。単にピノの広域のスタンダードではなくて。

既に安定した顧客を持った幸運な著名な生産者は、自分のスタイルを敢えて変える必要はありません。良くも悪くも彼らのスタイルはずっと同じです。しかし、売り急ぐ生産者は、早く飲めるように貧相なワインをデザインする大きな賭けに出ているのです。

But red wine is about tannins, and great wines are those with much quality tannins. To produce those in Burgundy from Pinot Noir, the recipie is old and simple: quality grapes usually from great parcels, reasonable extractions via cold soaking, ageing in barrels over fine lees for more than one year with slight reduction. This is very classical by now and we know it works well. The only drawback with this method is that one needs quality grapes for extracting and one should wait a few years of ageing in bottle before drinking.

But taste a few of these classical great wines -- may be from Hubert de Montille (before 2003!!!) -- or a few others etc... and compare... This is it! This is obvious.

I had the opportunity to taste recently from a small producer a great Chambolle-Musigny wine. First of all, the ratio Q/P was unbeatable, but this was so much different and much better from what I tasted from many winemakers (that I will not name but one can easely find everywhere). I was shocked how poor the later wines tasted in comparison. They seemed very light, little tannins, no length, amylic aromas... even on PC or GC parcels. Sorry but for the price they are sold, I want something in the botlle, not a mere Pinot regional standard.

Fortunately famous winemakers who already have solid clients do not need to change their style. Was it good or bad, their styles remain the same. But for winemakers willing to sell quickly the temptation is huge to design poor wines to be drunk quickly.

Summer is there... serve your wine cool! 夏はもうそこに・・・ワインは冷やして飲みましょう!


今日は暑いですね・・・。そこでいくつかアドバイス。ちょっと当たり前のように聞こえるかもしれませんがどうぞ聞いてください。暑い季節がまたやってきたので、ワインは比較的冷たくして注ぐことが大変大事です。どうせグラスの中ですぐにあったかくなってしまうので、赤ワインでも冷やすことを躊躇することはありません。ほんの数度の違いでワインの味わいは劇的に変わります。そして、赤ワインは18~19度よりもあたたかくなると、どんなワインも重たく、アルコール感が目立ち、アロマが消え去ってしまいます。また、栓を開けたボトルを22度を越える室温に放置したままにしないでください。そして、あたたかくなりすぎたら5分ほど冷蔵庫に入れてください。そうすることでワインにダメージを与えることはありません。

タンニンの多いワインは、少し前もって抜栓する必要があるかもしれません。その場合は、栓を抜いた後、ワインセラーや無ければ冷蔵庫などの涼しいところに置いてください。

暑くなってきたら、あまりタンニンの多くないワインや、白ワインのほうが楽しめると思います。グランクリュのことは暫し忘れて秋以降に取っておきましょう。では皆さんどうぞ楽しまれてください!

あ、それから個人的なメッセージですが、ムッシューI、ムルソーに氷を浮かべて飲むのはやめてください。それは禁止です。

Euh... it's hot today. Here are a few advices that may sound obvious. With hot temperatures coming back, it is very important to serve the wine rather cool. Don't hesitate, since it will warm up very quickly in the glass. Within a couple of degrees wine can change radically. And when it is warmer than 18-19 degrees any wine tends to taste heavy, alcoholic and aromas are gone... Also don't leave the opened bottle in a room at more than 22 degrees.  If it gets warm then just put it back five minutes in your fridge. That won't damage your wine.

For tannic wines you may need to open them in advance, so do so and put your bottles in a
cool place: cellar and if none, your fridge!

Also with heat you might enjoy slightly less tannic wines (forget grand crus and keep those for autumn or winter) or white wines. Enjoy!

Ah yes - personnal message to Mr I. No ice cubes in your glass of Meursault, this is forbidden.
