その前にまず、白ワインには大きく2種類あります。一つは若いうちから楽しめるけれど早くに死んでしまうワイン。もう一つは長熟ワインです。この2つ目のワインの主な欠点は、熟成を待たなければいけないことです。このことは変えようがない。偉大な白ワインを早いうちから楽しめるようにするあらゆる策略はどれも熟成前酸化を導く結果となります。実際そうなる理由があるのです・・・
ジャン=フランソワは、大変ピュアでエレガントなスタイルで人工的なトリックを用いず、素晴らしく熟成するワインを作ります。10年を経た彼のプルミエ・クリュを飲むのは、唯一無二の経験です。
けれど、ジャン=フランソワのワインは待たなければいけません!ムルソー プルミエ・クリュは10年後、村名は6~7年にその頂点を迎えます。
そうそう、ジャン=フランソワのもう一つの問題点は、ワインの生産量が少ない上にすぐ売り切れてしまうため、入手が大変困難なことです。

Well, regarding white wines one has to choose between two kinds: the ones which drink well young and die early and those made for ageing. The main drawback of the latter wines is that they imperatively need to be waited for. One cannot change that fact: all attempts to make great white wines drinkable early led to premature oxydations, and there are reasons for that...
Jean-Francois makes wines ageing well, in a very pure and elegant style without artifacts. Drinking a ten years old premier cru is somehow a unique experience. But JF's wines definitely needs to be waited for!!! Meursault Premier Crus are at their best after 10 years, Village after 6-7 years.
Oh... there is another problem with JF's wines: there are not so many bottles and they sell very well.
